Good news: these brownies are about to change your life. Bad news: they’re also about to change your pants size.

Now, to be clear, these aren’t throw-together-at-naptime brownies–that’s what break & bakes are for. These are more like put-dad-on-baby-duty brownies. Or prepare-for-baby-to-make-a-huge-mess brownies.

But these are so worth it. There are basically three steps: 1. Make brownies. 2. Add Oreo truffle. 3. MORE CHOCOLATE.

First, assemble your ingredients (sans baby).

Preheat the oven to 350 degrees F, and grease a 9×13 pan. Then, cream together the butter and sugar, until it’s light and fluffy, like this:

Then, add the eggs, one at a time. This always annoys me because, like, why can’t I just drop them in all at once and get that egg goo off my hands once and for all? You just can’t, okay? It really does mix more evenly if you do it one at a time, so just deal.

Then, add the vanilla, salt, cocoa, and flour. The cocoa and flour will get everywhere. Just accept that now, and make your husband clean it up later. Mix until it’s nice and smooth, and spread it evenly into the pan.

Bake for 25-30 minutes, until a toothpick comes out clean in the middle. Please do yourself a favor, and actually do the toothpick-check. Otherwise, if it inexplicably takes way longer than normal to cook, but you’re a cocky jerk about it and think you’re way too expert at this recipe to need the dumb toothpick-check, you might not notice that it hasn’t cooked all the way through until you’re halfway done with the next step and it’s too late to turn back and you have to throw the entire thing in the trash and make an emergency trip to Walmart to restock your ingredients and start all over. And at that point you might think, why did I commit to making these and writing a blog post about them because NOTHING IS WORTH THIS. But you really, really love them and you’ve promised to bring them to a BBQ, and you’re already half-done with this blog post, so you’d better get back to mixing, stat. At least that’s what someone told me might happen… I wouldn’t know anything about that.

So while your fully-cooked brownie layer cools, mix up the Oreo truffle layer. Whip up the cream cheese in the stand mixer until it’s nice and fluffy. Then, start adding in Oreos. I typically break them up in halves or quarters as I drop them in, but then I just let the mixer do the hard work. Save 4-5 for the topping, if you want, otherwise, mix in the whole package, until you have this velvety piece of heaven.

Once your brownie layer has fully cooled, spread the Oreo layer evenly on top.

I know, at this point, you’re probably thinking, “daaaamn this is the perfect brownie,” but you are wrong. It’s not yet. Melt your chocolate in the microwave according to the package directions, and pour it on top of the Oreo truffle spread, spreading it out evenly with a spatula.

Finally, crush up the few Oreos you saved (if you haven’t eaten them yet), and sprinkle them on top of the melted chocolate.

Stick it in the fridge for a few hours (or the freezer, if you’re impatient) to harden up before you cut them. Then bribe your husband to clean up the massive mess you’ve left behind in the kitchen by holding the brownies hostage because trust me, he’ll be begging for one by this point. Enjoy!

Instructions
  1. Preheat oven to 350 degrees, and grease a 9×13 pan.
  2. Cream together butter and sugar, until it’s light & fluffy.
  3. Add eggs one at a time, until fully combined.
  4. Add vanilla, salt, cocoa, and flour. Mix on low until combined, and then kick it up to medium for a few seconds to fully mix in.
  5. Spread evenly into pan, and bake for 25 – 30 minutes, or until a toothpick in the center comes out clean. Allow to cool completely.
  6. While the brownie layer is cooling, mix together the Oreo truffle: whip the cream cheese up in the mixer, and add in Oreos, breaking into halves or quarters as you drop them in. Save 4-5 for topping at the end.
  7. Mix on medium speed until Oreos are mostly crushed and blended into the cream cheese.
  8. When the brownie layer has cooled completely, gently spread the Oreo mixture on top.
  9. Melt the dipping chocolate in the microwave, per the package instructions.
  10. Pour immediately over the Oreo truffle layer, and spread evenly with a spatula.
  11. Crush remaining Oreos, and sprinkle over melted chocolate.
  12. Place in the refrigerator for 2-3 hours (or the freezer for 1 hour) to harden up before cutting and serving.
