Instant Pot Mac and Cheese

Instant Pot Mac and Cheese is creamy, gooey, cheesy goodness, and even better, it's easy and fast! 20 minutes, beginning to end, and your kids will beg for seconds.

I will admit that I held out way too long on making mac and cheese in the Instant Pot.

See, I’m a mac and cheese purist: I prefer Kraft Mac & Cheese over everything. Literally. I don’t care what gourmet bacon-truffle-lobster-garlic-whatever mac and cheese you’ve got, that blue box will always be better. I’m not saying I don’t enjoy other mac and cheeses, because, obvi. But that powder packet of cheese wins, hands down, every time.

The Ultimate Chocolate Chip Cookies

These Chocolate Chip Cookies are the ULTIMATE, tried and tested, best of the best, go-to cookie recipe. These cookies are a staple, and are sure to make you the most popular mom on the block!

There are a couple very important things you need to know about me to understand where this chocolate chip cookie recipe (and its well-deserved title of “the ultimate”) came from:

1. I’m a die-hard Friends fan. I’ve seen the entire series, beginning to end, literally more times than I can count. We watch it every night before bed, and when we finish the finale, we go right back to the pilot and start all over. No, that’s not weird… you’re weird.
2. I’m a Monica. Through and through. Continue Reading

Oreo Truffle Brownies

Oreo Truffle Brownies | One Hangry Mama

Good news: these brownies are about to change your life. Bad news: they’re also about to change your pants size.

Now, to be clear, these aren’t throw-together-at-naptime brownies–that’s what break & bakes are for. These are more like put-dad-on-baby-duty brownies. Or prepare-for-baby-to-make-a-huge-mess brownies.

But these are so worth it. There are basically three steps: 1. Make brownies. 2. Add Oreo truffle. 3. MORE CHOCOLATE. Continue Reading

Pan-Seared Salmon

One Hangry Mama | Pan-Seared Salmon

So as it turns out, dinner does not cook itself, and with two working parents and a baby on a strict schedule, time for cooking is virtually nonexistent. Enter: pan-seared salmon. I always keep Costco Atlantic salmon in the freezer, so this is my go-to recipe when I’m on my way home from work and realize I made zero plans for dinner and have exactly 30 minutes to get something thrown together–which happens at least once a week. The husband and baby both love it (is it bougey that my baby eats salmon? I hope so), and it only takes 15 minutes to prep and cook. This recipe is also a one-armed-wonder, in that I’ve managed to make it one-handed while the baby terrorist demanded I hold him. Continue Reading
